In addition to what Dan described, it would be possible to create a report using the information found in Data Feeds (you will need to be an administrator of your workplace, or have the Access Analytics Role to be able to access your workplace's data feeds).
Such a report would need to combine information from three different Data Feeds tables. The fContentDocument table provides a history of all activity on all documents in your workplace and who performed it. This table can be combined with the dUser table (for user information like name/email), and the dContentDocument table (for document name information).
The example Document Audit template could be modified to better serve the purpose you are looking for. This report combines the above tables but does require filtering for the individuals that you are interested in. When first loaded, this PowerBi template will prompt you for your digital workplace odata url (eg. https://{your URL}/odata), and your Igloo authentication credentials so it can connect to your workplaces data feeds.
Hi and thank you to Dan Latendre and Jesse Langstaff for your comments on tracking documents an employee has accessed. Firstly, from what I have observed, Dan is quite correct, the personal profile is an option to see on a genral basis the activity of an employee, however it does not go into specifics so in our scenario it did not give us the answers we were looking for. Secondly, Jesse's comments about data feeds is a valid one and looked like it was going to work, however, not being a whizz at IT, I struggled to bring data sets together in order to gain something credible. The data is definately there, but it is not an easy to run application for an administrator, and I am still wondering just exactly what documents an individual has accessed. Maybe this could be a widget just available to administrators. Key point to remember, not all businesses have dedicated IT departments, relying instead on occasional IT support from external agencies, and therefore the administrator, like myself, has only the rudimentry basics behind the Igloo platform.
My final shot across the bow is... I really do like how easy Igloo is to build Spaces, pages, calendars, issue invitations etc, but the Analytics process is complicated for those with limited IT knowledge. (when I have the spare time... data feeds will make for some good bedtime reading).

You can track user activity in their personal profile. The feed isn't document specific, it is all interactions.
